Storage & Service Tanks
Holding chocolate is easy. Holding it at temperature, everywhere in the tank, is not.

Between refining, tempering, and depositing, chocolate spends hours in tanks. Any cold spot in that time starts unwanted crystallisation; any hot spot risks the product. The tank is the least exciting equipment in the plant right up until it costs you a batch.
Alpy Storage and Service Tanks are double-jacketed and electrically heated, holding chocolate, compound, and cream products at uniform temperature throughout the vessel — no cold corners near the wall, no degradation near the elements. Hygienic, food-grade stainless steel construction throughout, in capacities from 1,000 to 5,000 litres to match any stage of your line.
Worthwhile options
- Vibrating sieve — screens out unwanted particles before product moves downstream, protecting your depositors and your finished product
- Fan group — draws off volatile compounds and excess moisture during holding, a measurable improvement in flavour and processing behaviour for sensitive recipes

Planning tankage
How much storage you need depends on the rhythm of your line: a continuous refining system like the Chocoline needs different buffering than a batch operation feeding a moulding line in campaigns. Send us your line layout, or have us draw one, and tank sizing comes out of the same exercise.
