Chocolate Refiners

Refining is the heart of chocolate quality, and the choice here is between two systems. Conti Ball Mills refine continuously, one pass in and finished fineness out, at 400 to 1,000 kg/h: choose them for sustained volume and consistent fineness across long runs. Batch System Ball Mills refine in 500 to 1,000 kg circulation cycles at a lower investment: choose them for smaller volumes, mixed recipes, or a first production line.

Both handle chocolate, compound, cream, and other fat-based products, and both work with the same Alpy preparation mixers and tanks, so upgrading from batch to continuous later means adding equipment, not replacing it. And if you would rather take the whole refining stage as a single engineered system, the Continuous System Chocolines packages a preparation mixer, service tank, and Conti Ball Mill into one line.

Frequently Asked Questions

What is the difference between a ball mill and a roll refiner?
A five-roll refiner reduces particle size by crushing chocolate between rollers — the traditional high-end route. A ball mill refines by circulating the mass through a bed of steel balls. Ball mills reach fine particle sizes with lower capital cost, a smaller footprint, and simpler operation, which is why they suit most compound and chocolate producers. Alpy builds ball mill refiners in both continuous and batch configurations.
Continuous or batch ball mill — which is right for me?
It depends on volume and recipe variety. A continuous (Conti) mill refines in one pass at 400–1,000 kg/h and gives the lowest cost per kilogram for sustained, high-volume runs. A batch mill refines in 500–1,000 kg circulation cycles at a lower purchase price and suits smaller volumes, frequent recipe changes, or a first line. Both use the same Alpy mixers and tanks, so you can upgrade later by adding equipment, not replacing it.
What products can the refiners handle?
Chocolate, compound (cocoa-butter-substitute) coatings, creams, and other fat-based masses. Throughput or circulation time is the quality control: run the same recipe the same way and you reach the same fineness every cycle.
