Filled chocolates are the most demanding products in moulding. A praline is really three products made in sequence: a shell of exact wall thickness, a filling deposited into it without breaching it, and a base that seals the two into one flawless piece. Each step has its own temperatures, its own cooling, its own failure modes.

The Alpy Chocolate Shell Moulding Line runs that entire sequence as one integrated process. Follow the stations and you are reading the recipe for a filled chocolate, in order:

  1. Mould heating tunnel
  2. One-shot depositor with vibration
  3. Shell making group
  4. Horizontal shell cooling tunnel
  5. Elevator-type shell cooling tunnel
  6. One-shot depositor for filling, with vibration
  7. Elevator-type filling cooling tunnel
  8. Mould heating tunnel (pre-covering)
  9. Chocolate depositor (covering) with vibration
  10. Scraper drum

The most precisely controlled line Alpy builds

Coordinating fourteen stations takes control hardware, and the Shell line carries it: 31 servo motors in the standard configuration — the most in the Alpy range — with depositing governed by the proprietary ALPY Cam Profile Depositing Program. That is what holds shell walls uniform and deposit weights repeatable at production speed, which is what decides both your product quality and your chocolate consumption per piece.

Where this line fits

If your products are solid or one-shot filled, the MODUFLEX or PIN-DRIVE lines do the job at lower investment. The Shell line is for manufacturers whose business is true filled chocolates — pralines, bonbons, liquid-centre products — where shell quality is the product. Many customers run shell and one-shot production on this single line.
